Remember, remember the 5th November!

You know winter is with us when it’s time for the annual fireworks party. The big coat gets dusted down and wearing several pairs of socks to keep your feet warm in your welly boots is the fashion for one night only.

Easy and sooo tasty…

 

  • Heat your oven to 180C/160C fan/gas 4. Toss the chicken wings in olive oil, adding sliced red chilli, salt and pepper. Place on a baking tray & cook for 30 mins.

 

  • Mix 200g of Mango chutney with 3-4 dashes of lime juice and brush over the chicken, return to the oven for 20 mins, making sure you turn and brush halfway through cooking. Serve with a scatter of coriander!

 

Diwali – 12th November

 

Diwali is a five day celebration that occurs in autumn each year, and this year it starts on Sunday 12th November with the Festival of Light.

 

Hindus, Jains and Sikh’s celebrate this special occasion in many ways including decorating buildings with bright lights and exchanging gifts with delicious food at the heart of their festivities.

 

Enjoy a big bowl of Mango Sweet Potato Quinoa Salad as part of the celebrations, using our perfectly ripe and ready to eat Mango.

26th November is “Stir It Up Sunday”

 

Say it quietly but Christmas is on the way! Stir-it-up Sunday is a centuries-old annual tradition where home-cooks spend the last Sunday before Advent ‘stirring up’ their Christmas pudding.

In Victorian times it was traditional for families to gather together to get their fruit puddings stirred up, steamed and stored ahead of Christmas.

It might not be everyone’s favourite but no Christmas dinner table would be complete without a Christmas pudding!

As you know, at Nature’s Finest we are all for making your life more convenient, so if you don’t have time to make one, or you forget entirely and need to whip up a quick serving or two –  we’ve got the answer!

The Finest (Christmas) Pudding – in a mug!

  • Put 100g of drained Nature’s Finest prunes, 300g of dried fruit, 75g of bread crumbs, 2 tsp of mixed spice, 150g mincemeat, 2 x tbsp of treacle, zest and juice of one orange and 2tbsp of brown ale in a food processor and blitz for a 30 seconds until all ingredients combined.

 

  • Grease four microwave-proof teacups with butter. Place a round of greaseproof paper in the base of each cup.

 

  • Divide the mixture between the cups and cover with a larger round of greaseproof paper.

 

  • Microwave two puddings at a time at 600 watts for 8 minutes.
  • Leave the puddings to stand for 5 minutes before turning out and serving with some double cream and maybe a drizzle of something naughty to celebrate Christmas!
